The British have an enduring love affair with cask ale which, we believe, has a lot to do with the care and attention that goes into making it. Cask-conditioned ale is very different to other beers: as a living product it has not been filtered or pasteurised at the brewery. The beer is racked into casks at the end of the primary fermentation process, allowing the secondary fermentation to take part in the cask itself – this process is known as conditioning, and takes place in the cellar. Cask ale is unique to British pubs and cannot be found anywhere else in the world. The language used in its production is just as unique with words such as stage, tapping, firkins and hard pegs.
